Are they actually Mexican? If so, flowers for her and a bottle of good Tequila or Chivas whisky for him. Can't go wrong.

You could always call them and ask what you can bring. I do that all the time, and I usually end with "beer, chips, dessert?", then if they say"no, just bring yourself, we've got everything here", then take flowers. No-one was ever offended by flowers.

If they say dessert, doesn't mean you have to make it - pick something up on the way l...

Arrive riding on a burro, Eskimo in a sombrero and you shaking caracas. Hire a surprise Mariachi band to serenade you all after dinner would be a nice touch.
