Cannibalise the internet for recipes by Rytek Kutas, he is the high priest of sausage making. I had his old book that was geared to butchers and made 300 lbs at a shot so had to do the math, but now there are new editions. As I said, there are quite a few recipes on the net. I've never been a fan of pre-mixed spice packs and enjoy making a few different varieties. I use Prague Powder for the nitrite (doesn't take much, be careful), and like to make it on Monday night, because that is when the Polka Power Hour (2 hr show) is on Community Radio.

Thanks for the tip, l will def check him out. Was going to do some trials before l leave so will use those recipes.

I have seen Cheshire cheese for sale several times, except that it's "Cheshire cheese with cranberries"!

I have never seen Cheshire cheese the way it should be, just plain Cheshire cheese.

Well I think it's pretty obvious why they export it, because nobody in their right mind in the UK would eat cheese polluted by such nonsense!

Which reminds me, I recently found a gourmet cheese shop reasonably conveniently located, so I need to start making visits to see what they have available and whether they are able to source other things by request.

Broken down into 3 syllables seems to be the way, War sester shire,

It's easier just to drop the "shire", because the "Worcester" usually comes out OK.

Even simple 'Arkansas' is a challenge ... it 'should' (according to the 'rules' that we all know don't exist), be pronounced as 'Ar - kan - sas' (Kansas with an 'Ar' in front!). But it's pronounced 'Ar - kn - saw' .
