You make your own sauce, best one I read was for a phal. It began..." Use any cooking oil you want, there are so many chillis in this you'll not taste the oil. "

Used to be a nice little Indian store in Cambridge that sold silver tubes of Phal paste. The only label said "Phal, Really Very Hot" or "Phal, Not So Very Hot".
I made a nice little chicken curry with one teaspoon of the "Phal, Not So Very Hot" and I was in pain for hours...
...and I needn't even go into details about the afterburn the next day!

I stayed in Addison after the latest gig binge -- booked the hotel without knowing the area. When I got there I found it was behind a huge *British* antique reproduction furniture store.
Knowing you lot you'd phone ahead and tell them to make sure my curry was "desi" hot.

The East Asian community is so large in the area that there is a little shop/catering business that sells/makes only Indian sweets.
So, if I crave Indian food, I don't have to drive far to find authentic Indian in the Durham/Cary/Morrisville area

You know what? I don't think I've ever seen a Peshwari naan on a menu. In fact, I tend to stay clear of naan 'cos American flour is generally too fine and the naan is rather flat, not puffy.

Best damned naan I've eaten in years, and not buttered (shudder!) like they insist on doing at the Clay Pit in Addison.

was there butter (oil) on the naan as served?
sure isn't here.
The naan is puffy and more dry and paper-like. Maybe I need to eat at Clay Pit in Addison and report back to HQ.
