Chili
 
So it being a bit nippy today, had some chillie, but talking about it, there's some really weird stuff about it, well we went to a sheep shearing animal fair today, out in Drumlin Farm, Lincoln MA for anyone in the area, lot of fun...but they had chillie with lamb in it and people were muttering that wasn't real chillie.

Seems some don't think it's real if it has meat in it, others if it has beans in it.

So what is it to you?

We have a tomato based one with fried bacon and some minced beef cooked in a bit of the bacon fat, beans, peppers, onions, sweet corn and served with grated cheese on top and corn bread.

Back in England, it would be served on a bed of rice and no cornbread, just the way I grew up I guess but the missus thought that weird and gross.

Cornbread rocks, so it's a fair swop :D

Texas Chili is made with big ole chunks of meat. The boys aren't big fans of traditional chili but love this stuff. I've lost count of how many times I have made it - super easy - bung it all in the crock pot in the morning :).

That sounds pretty yum...weird with chicken in it though.

So what's hominy? That's the vomit off of sweetcorn isn't it?

It's processed corn - not unlike butter beans but round like a chickpea.

A "real" Texan by his definition was one who was born there told me that "real" chili was chunks of beef, in a tomato / onion base with a good handfull of halapenos. Beans were served as a side dish along with whole halapenos.

Chili is very regional. Around here, we have "Cincinnati style chili", which I would argue isn't chili at all. Still, it's pretty tasty. (includes ingredients such as cinnamon and cocoa)

We host a chili cook off every year for friends and neighbors.
Last year we had "white" chili made with chicken in a white sauce. My Texan neighbor made a venison chili. All the Texans that came made it without beans.
The Brits that came made it is as hot as they could! Someone made a veggie chili but that didn't go down too well!
The winning chili, despite us living in Texas, was made with ground/minced beef in a very rich tomato based sauce. It had a good kick to it and beans and cornbread were served on the side :)

How was the venison chili ? I am not fond of venison in the burger / sausage or stew form. It never occured to me to try it in a chili.

Ground turkey, kidney beans, great northern beans, pinto beans, green pepper, dived tomatoes, Hungarian paprika, chili powder, cayenne pepper, ground red pepper, black pepper and white pepper. It's good and I don't care what people say!

That sounds good!

I grew up with chili being made with ground beef, tomatoes and kidney beans. My grandmother used to put it over spaghetti (on occasion, because that's how she had it back in Indiana.) I really liked it in the UK and putting it over rice.

aka "Chili Mac" as opposed to "Chili Pie" which is served over tortilla chips. :)
