Having bottled my Branston I decided to puree some of it to thicken it up, as suggested by Sophia. I also added some cornflower to help thicken it a bit and added a bit more vinegar to tart it just a shade more. It now looks like the real thing and tastes pretty good.

I'm SO glad I found this recipe....glad it helped you guys as well!
Our first container is just about gone now!....my husband is addicted to 'branston'!
I thought about adding a little bit of cornflour as well, but,by the time I'd pureed a bit,I didn't think it needed it.Next time I make it I will definately use Granny Smith apples, and I will definately 'can' it properly...I have no doubt I'll be making more in the next week or so!
Hope everyone has a Great Thanksgiving!....Sophia (IL)

Any ideas on pickled eggs? Just used to buy them in England but I want to make some. All the recipes add pickling spices and all sorts, some even add beetroot. Has anybody just made them with eggs and vinegar?

The reason why beetroot is used at times is to colour them. Nothing more nothing less as far as I know.

You would use the pickled beetroot juice for the colouring, not add beetroot to the eggs. Sorry if I did not make myself clear.

I did find a web site that shows what spices are blended together to make pickling spice,yesterday...
www.thefoody.com/recipes.html
it's a British site so it will probably be the same mix used in the pickling process over there, does anyone know if the use a different blend over here?,the pickled things taste different to me.....
anyway,hope it helps you...good luck!...Sophia
