Butcher Speak
 

I want to see if I can get any of the local grocery store butchers to cut me some English style back bacon. How should I describe the cut to them? What is the actual terminology to use?

haha we've been trying that...love me good old back bacon and daddies sauce. I'm thinking about taking a pix of a pig and if i knew where the back bacon came from i could show him...if you know maybe you could try that...actually bet there's one on the uk web pages....gonna take a look later :p

I have an english store about 1 mile from my house that sells English (Danish) bacon...the real thing! Got 2 packs earlier today.

The closest I've seen in US terms is Canadian Bacon so maybe if you tell them you want it cut like that?

Williams says they use pork loins. See

Will the pork be cured for bacon usage?

I believe the actual cut is called a Wiltshire cut, but I could be wrong on that.

I think something along this line would suffice

"Can I have some Bacon that doesn't look like or taste like the Burnt Crap that you Americans normally dish out?";)

I bet my butcher $50 he could not reach the meat on his top shelf.
He refused the bet claiming the steaks were too high :rolleyes:

Now if there is one thing I have got it is Daddies sauce. Would not be without it.
