I don't see where they verify that the microwave irradiation leaves the food the same as before, except with the mold spores killed. Besides, this wouldn't keep bread from going stale or from spoiling because of the action of enzymes. It might work well for long-term-storage food, though.

Food waste is a massive problem - biggest single thing going to landfill in the USA. Innovation like this will help create more solutions.

That, or we'll have lots of croutons.

With the exception of crusty rolls, the supermarket bread here seems to last forever anyway.....always wondered about that.........

I tried freezing bread, but it never tastes the same or has the same texture once thawed again.

Only if its going to be toasted afterwards - never defrosts properly to use any other way.

Yes, how can 'a sophisticated microwave array' stop it going stale? It would still need the magic rubber ingredient they put in 'Sarah Lee' bread.

I was reading that wheat flour usually contains bromine which makes you dull-witted and lacking energy, I'm trying to cut down because I always feel (even more) like that after eating bread.

Probably more to do with all the carbs, spikes your insulin then you crash later.

There can sometimes be enough trouble finding bread without the gym mat material in it (Azodicarbonamide), HFCS or any of the artificial sweeteners. Luckily, there's three bakeries nearby that make bread without any of the above, along with a couple of grocery stores.

I was just looking it up. It's banned in most countries, apparently, but not in the US. The FDA urged bakers to stop using it and it has been partially successful. I don't know if the article is accurate or not.

I love bread but find US bread too sweet for my tastes. So I've made my own since living here. Of course, I use a bread machine and it has an aluminium pan so I'm not sure how good that organic wholewheat flour is after being in there. I only ever do it on a dough cycle and then bake it in the oven because I like a proper loaf shaped loaf without a whole in the bottom where the paddle was and I love the smell of it baking.

It was one of the first things I bought for the kitchen when I moved here. It's great - makes proper bread not the pappy sweet white stuff in the shops. It doesn't last nearly as long as the stuff in the shops though, so I tend to freeze it.

I've also not found any problems using defrosted bread. I slice it once properly cooled, then freeze in an airtight container. You do have to use immediately it's defrosted (eg if you're making sandwiches), but if you do then I've not found any great degradation in texture or taste. Leave it defrosting for a couple of hours then yes it goes stale and hard quickly.
