Green Card - Adjustment of Status
Sent off our I-485 and I-140 yesterday, have any British done this in the last 12 months and received their green card already?

Yes, and there are several just ahead of you by a few months waiting for adjudication of their petitions. You can do an advance search of this forum to find those people. Some may not be British citizens though as the forums are open to all nationalities.

You got your interview and your green card in the same week? Or was that a typo?

Country of Birth, countries resided in since birth matter far more than simply being British at time of AoS.

Also, I imagine that by your forum name you are a Wigan or an Oldham fan...so that delays you by at least 5 years

By reading some of these I feel like something has gone wrong with mine. I applied for AOS on 06 June 2018 got a letter back saying I got an extension for 18 months from my 2 year green card. But when it comes to putting in my reciept number to check my status. It saying it’s non exciting. Has anyone expericances this at all? I am currently on a 20 min wait time on the phone calling them now.

I love the are-you-British inference that this will somehow expedite things... Pretty sure it doesn't.
That being said, these are wickedly short turnaround times. It was a couple of years for me and I didn't get an RFE.

Filed January 2017, got my PR February 2018.
Yes, I am British even though that has nothing to do with anything.

Going to be a couple of months behind you. Filed the I140 (I think I have these around the right way) in September. Had a RFE, submitted that last week. The I485 is being submitted in January as we had travel planned at Christmas and it wasn't Current anyway. The lawyers have suggested their current experience is around 12-14 months.
