Seeing that I know I need U.S. Funds for the interview, what forms of payment do they
accept at the Consulate. Do they take cash?

Ask the consulate. Sometimes they accept deposits into their local bank account, or
accept money orders in local currency. That way you don't have to obtain US dollars.
