Do I need to update all my forms for my AOS interview next week
We're submitting a new I-864 anyways. While going through the I-864 I realised that I now have an A# and a Social Security number that I didn't have when we submitted the forms originally. Should I redo all the forms to include my A# and social numbers?
I also have a (technically) new job (same work, same position in the US branch of a UK company). And any reason why I wouldn't want to update my employment details?

If your financial situation has changed, then yes... go ahead and submit a new I-864. If you want to redo the forms simply to add your A# and SS# then it's easier to tell the officer at the interview and he'll add them to your previously submitted I-864.
If there's more money in it for you, go ahead and update. If not, I wouldn't mention the change.

The other forms do not need to be updated and filled out again. Just leave them the way they were.

Your adjudicating officer will make notes in red on your filed petition with any updates that come to light during your interview. A new I-485 is not required.
As for your employment, your position within the company is not noted or required for the I-864 but your salary is. Your paystubs will attest to any change in financial status. You can bring a new I-864 if your application was borderline or just bring in the required current paystubs and latest tax return. I'm taking into account that YOU are the USC. If you aren't and your paycheck is not required for the I-864 to met the requirement, then don't worry about it.

Thanks for your replies everyone. I'm the intending immigrant and we're using my ongoing salary on the I-864 too.
We meet this requirement from the I-864 instructions "If the intending immigrant is your spouse, his or her income can be included if it will continue from the same source after he or she obtains lawful permanent resident status."
We're only updating the I-864, we'll leave the rest well enough alone. I've spent a couple of days getting our "show and tell" in order and planning the trip on the day so I'm feeling much happier and better organised now. Looking forward to getting this over now

I know a couple where the wife did not work, had never worked. They used a joint sponsor for the K-1 and filing AOS. The immigrant husband worked as soon as he came to the USA on the K-1 visa, and had been working 8 months by the time they went to the AOS interview. The officer did not allow his income to be included, and they had to still keep the joint sponsor on board.
Just wanted to share that so you'll be prepared, just in case the officer doesn't accept the immigrant's income.

I've been with the UK branch of my company for about 5 years and just come onto the US payroll. I have wads of documentation, including US payslip, for my job in both branches and a nice letter from my boss and CEO of the company My own salary is way above the poverty line too. I'm hoping it's going to be OK
