It just means that I-485s might be pending for longer due to COVID-19, but there was never any guarantees on I-485 processing times anyway. They were sometimes pending for years even before COVID-19. And how long I-485 is pending doesn't matter that much, because you can remain in the US for as long as I-485 is pending, and you can renew EAD and Advance Parole for free for as long as I-485 is pending.

I am curious if anyone can point to stats like how many are pending and how long it normally used to take and what other consequences there are, like work permits running out makes unemployment figures look better?

Back in 1998/1999 AOS was taking anywhere from 1 year to over 2 years.

It says there are exemptions but only mentions the medical field. Are spouse Green Cards exempt (US Citizen)? Getting married on July 3rd and will be filing immediately after

There is no effect on your ability to file. The supposed "hold" (which supposedly ended) was only an internal delay in processing.
