Sounds like a good trip...have fun, and bring plenty of money for gas!

Also consider as small an RV as possible for maneuverability.
Also, if you get flagged by a cop car. Come to a gentle stop at the side of the road. Stay in the vehicle, hands clear on the wheel, follow instructions as given. Do not get out unless instructed. And, as mentioned, be very polite.
Good luck and have a great time.
(Incidentally..why those States? You seem to be avoiding a lot of scenic possibilities. No Yellowstone, Grand Canyon, Death Valley, Tahoe, Yosemite?)

Always be polite, of course, but results will depend on the policeman in question.
I got stopped for speeding years ago, there were faster cars than me on the road but I got pulled. I was nice as pie but the cnut still gave me the ticket.

We have 2500 miles though so may forget Dallas and do the bits mentioned above.

In most states, if the RV cab is separate from the passenger area, people in the passenger area can drink. Do you think Willie Nelson is dry while ridding on his bus?

Why on Earth are you driving around Kansas, Nebraska, Iowa and Oklahoma? Have you driven through these states before? It's no exaggeration to say that these may be literally the most boring driving locales in the entire world. Eastern Colorado is equally bad. New Mexico is really nice, western Colorado is stunning, Texas has a few nice areas. The rest... is it possible to pick a different route? Trust me, I've driven through those states several times.
One other thing, continue calling it "San Fran" and a local may attempt to punch you. Fair warning.

I have a plan for an RV route going up as far as Mt Rushmore, then coming back "westabout" through the Y parks, Colorado, New Mexico etc. I don't like doing "out and back", prefer to do a circular route, and the thing that is holding me back is the lack of interest in going up the middle (OK/KS/NE)!
That said, I just enjoy getting out there, so any trip out on the road is a good trip.
