Right on. If there's leftover tuna, curry etc in the fridge I just microwave a potato and top it with the leftovers.

Jacket potato or baked potato? I used to call them jacket potatoes before moving here

Baked MUCH better, but if speed is important, micro for the first half of cooking then 30-45 mins in the oven is acceptable.

I still say jacket, but have to then switch to baked when my kids look at me blankly.

Baked is much better but I'm talking about coming home after 12 hour shifts and slinging some leftovers on top of a microwaved potato.

I love making the twice baked ones but I'm meant to be staying away from white carbs, white rice, white potatoes etc.

There's a lot of that going on. The multi colored carrot packs, orange and purple cauliflowers. I've seen the purple potatoes but not the orange ones. I've had both a purple and orange cauliflower and can't taste any difference but they do have different nutritional content. I'm going to check out the different potatoes and see if any are better or not. I do like white potatoes, it's a weakness.

Scrape out virtually all of the insides and do loaded potato skins instead - it's near enough the same thing, and squeaks in under the lowish carb radar.

I am not a big potato fan but for baked when I have one every blue moon, butter/margarine, sour cream and some cheese.

Now the talk of purple cauliflower? Is that some US thing? Only have the white variety here, although potatoes seems to come in different colors on the outside.

Just give me an oven baked potato with butter and sour cream. No salt, sometimes a bit of pepper. Salted already from the butter so don't add table salt. Like cheese in mashed potatoes not on my baked and never any other add-ons.

Read alot of references to putting tuna on a baked potato, I must confess that I had never heard of that. Is the tuna heated with the potato or added as a topping after baking?
I am assuming this is an English thing.
