Hello MX5
Here, in Spain, the most typical food in Christmas can be
red cabbage
escarole with pomegranate
young eels (angulas, well, this used to be, now the are prohibitive)
crayfishes, shrimps, clams, .... (sea food)
baked sea bream
roasted lamb
roasted suckling pig
roasted turkey
those are some of the most traditional nourishments, at least that i know because each part of Spain has their own traditions.
If i tell the truth, i prefer to eat something like croquettes, chicken, galician pie, octopus, oysters... everything i like.

i hope it helps
