Anyone have any experience of the Hague Convention or applying for permission to remove a child from Spain to the UK?

yep depends on what is stated in the custody papers,but the chances are if your ex or childs father has any visiting rights then you gota get his permission to take the child outa Spain otherwise it's kidnaping.
