again, something I have had an awful time finding!! Alcampo and Carrefour have none, Mercadona has none, and the Corte Ingles have some....but they are ridiculously tiny capsules! I have sent a baking list back to Ireland, looks like im going to have to stock up on some things!!!

I gave up the hunt for any decent cake ingredients in Spain but fortunately I live pretty close to Morrisons in Gib who have everything I need for cakes including decent whipping cream, dried fruit that isn't waxy, many different types of flour, a huge selection of sugar....

leading me on to my next question.why is all the dried fruit in Spain waxy ?

Have you tried Amazon Grocery site. If you order over £25.00 (click on Free Super Saver Delivery) it will come up with quite a comprehensive list of items on Cooking and Baking Supplies.

Sometimes they do not deliver certain items to Spain - for example I have ordered on numerous occasions 2 x 5kg containers of rice all ok but they will not deliver tea bags.

Azucar glacé = caster sugar. About €1.50 in Eroski for a 250g container.

Self raising flour = harina para reposteria. Not usually sold in the 1kg bags that plain flour is.

last time I was over in Murcia the Eroski store had closing down posters in them... I heard they were going into liquidation??

I don't think that is necessarily SR flour - it's a "soft" flour for cake making.

There are some Spanish SR flours around and I think you will find that they mention "levadura" on the label somewhere.

We've used it to make sponge cakes & it seems to work ok. Maybe adding some raising agent as you suggest is also a good idea.

Sorry about that. Here in the Basque country, they are in abundance, unlike Mercadona.

thanks everyone, i found the azucar glace in the mercadona! It is expensive, but ill have to make do! And thanks for the tip on looking for sr flour...ill keep my eye out for it!

Buy granulated sugar, grind it in food grinder it will make castor sugar, grind it a bit more it will then be icing sugar.

Add baking powder or bicarbonate of soda to plain flour it will then be self raising flour.

To make a baking powder ie. raising agent; 2 parts Cream of Tartar to 1 part Bicarbonate of Soda; piece of cake!

el arbol do self raising flour, but it is expensive. Lydol occasionally have dried fruit and Lydols own make baking powder is cheap works fine when added to their normal flour.

Yes, just look for 'Harina con levadura' it's just SR flour. We found that you have to experiment a bit as some flours are better than others for certain types of baking, and I not just meaning the difference between Plain and SR. Some of the Spanish flours are very specifically made for a purpose.
