I have Lobster, all in English.
No PAYG but €12 a month for 8gb of data and free calls in Spain and back to the UK (and most of Europe) included no limit on call time.

I use HITS 4.99 a month I get 250 National minutes in spain landline or mobile and 3GB data. For uk calls I just just use a cheap voip from either wifi in the house or the data if out and about. You need to make sure of coverage wherever you live HITS use Orange now they used to use Vodafone

There's simyo which is Orange's low-cost brand, they do prepay, you can click on the 'Móvil' tab and choose your own tariffs (e.g. 10Gb/month with PAYG calls is €6), if you don't use up all your mobile data one month it'll roll over for up to the next three months, when you get a bank account you can switch over to contract and pay the same prices, and it seems they still treat the UK as being in the EU as far as roaming goes but I've not visited the UK so far this year so I can't confirm that.
Cons: No English language option for their website, and you can't walk into a shop and buy one, they need an address to send your SIM card to (and phone if you buy one).
Also as with all mobile operators in Spain you'll have to be ready to upload/show ID, either passport or TIE.

The most important factor in deciding who to use is not simply the price and what it includes but if it has satisfactory coverage where you need it.
The shine quickly wears off a cheap deal when you have to stand on the toilet seat to get a signal!
There are only 4 core operators in Spain, Vodafone, Orange, Yoigo, and Movistar, all others are resellers of one of those.
Unfortunately sometimes the only way to discover which operator, or operators, have adequate coverage in any given spot is to buy a one off prepaid SIM from each and try it out.
I use Lobster who use the Movistar network, living slightly off the beaten track Movistar is the only network which provides satisfactory cover as I had to discover by that method.

Watch the small print. I have an “ unlimited” everything Movistar SIM which is limited on UK calls.
my Lobster 12 euros unlimited with 8 gb works very well.
