it really is........fresh, not manky......we've followed the delivery from the boat to the store - but I would guess that it's not all local, as I'm sure they still get stuff from elsewhere

Re: Do you Jamón ?

On the fish rather than the Jamon topic, I recently bought some frozen haddock from Iceland in Malaga.

It was excellent but I spotted on the label that it was caught in the North Atlantic but packed in China. I raised this with their customer care department and discovered that it is sent to China in refrigerated containers (not frozen) by boat and is filleted, frozen and packed in China (because they are good at it and it is cheaper - they said.)

It is then shipped by freighter (frozen) back to the UK and thence on to Spain.

Could this be a world record for food miles?

Anyway it tastes really good and it is the only way you can buy (non smoked) haddock in Spain - or at least I have yet to find another source.

OK, so the jamón thread seems to have turned a bit fishy  but I have yet to find haddock in Spain, smoked or unsmoked. I do hot smoke my own fish but never yet seen haddock on offer but then we do not have an Iceland near us.

If its not a record it must be damned close. I know shipping per tonne is cheap by sea but that does sound a bit excessive. Must take a few days from catch to chinese process plant

More like 3-4 weeks! These days they keep stuff in a special gas, usually a mixture of CO2 and Nitrogen that almost completely removes the chance of bacterial action.

More and more food is packaged this way - packs of fresh meat and even bread products.

It's really strange that haddock is so rare. The Spanish fishing fleet is all over the areas where it is found and bearing in mind how much they like hake (which is similar but IMHO inferior to haddock). It's the same in France.

Just about the only fish not frozen will be that which is farmed and trucked straight to the supermarket.

not all fish is frozen. fresh even loaded in the top of scotland then pushing it down to madrid.
or caught in south africa(fresh.)flown to uk.load at the airport then straight to madrid

You can tell if a fish is fresh by the brightness of the eye. I tend to leave the Dorado/Sea bream well alone as most is farmed in Greece however farmed or otherwise here is a nice recipe.

Below is a nice piccy of some bream at my local fishmonger/pescadero/a

Back to The Ham Thread.

Serrano ham contains a high level of oleic acid, a mono-unsaturated fat which can have the effect of lowering cholesterol levels and has also recently been proved to have anti- cancer properties.:thumbup::thumbup:

FACTORS THAT DETERMINE COST OF JAMON SERRANO

Three Factors that Determine the Cost of Spanish Ham:
1. The “jamón” or hind leg of the pig is much meatier than the “paleta” or front leg and shoulder. Hind legs are a better value for money.
2. The Iberian, “pata negra” or black hoof – pigs are much more costly than the white pigs. The Iberian piggies are descendants of wild boars and have a more wild taste.
3. The alimentation or nourishment given to the pigs makes an enormous difference in the market price of the ham.:ohmy:

There are three kinds of nourishment used to feed the piggies.

a. Jamón Ibérico de Bellota: This ham comes from pigs that have been fed exclusively acorns and herbs.
b. Jamón Ibérico de Recebo: These pigs are fed on range acorns and their last months of feeding have been complemented with commercial feeds.
c. Jamón Ibérico de Cebo: These pigs have been fed continually with an authorized commercial feed concentrate mixed with range acorns.

So there you are you takes your ham and you makes your choice be it cost or flavour. I would always try the middle price range and see if its for you. I love to take a few slices in the afternoon with a cold glass of fino before my 2 hour kippypoos. I would buy a ham a year as I get hammed out and I prefer to eat fish to be honest. But its a nice focal point in the kitchen.

As I said earlier the back bacon on the fresh meat counter at Mucky Donna is great value at 6 euros a kilo..............don't get that frozen value crap the losers sell in the ohhhhhhhhhhhhhhhh you can not live without us English shop. I would not give those people a bean.:mad: You can get HP from Muckys anyway. And Heinz beans which we always have in for a late supper after we have had a heavy luncheon. :p The Cured Spanish ham has a place in my life but I do have the Bacon Sandwich or porridge after my return from dog walking each morning.

I have heard rumours that they are planning to close all of the deli coounters.........and the fresh fish counters:mad:

I read somewhere that Merca will be closing all its deli counters by the end of the year.

Any one else heard the rumour?
