Mmmmmmmmmmmm.....have done a similar dish, same ingredients but marinated the ribs then hubby cooked on barbi!!

Dorado

Fry in olive oil with garlic and add a punnet of cherry toms cut in half and a good splash of balsamic vinegar. When fish cooked reduce the sauce. Really nice.

Tarragon is Estragon and cumin is Cuminos Grano. I put the English labels on my spice jars some time back as had a great Spanish cook book (that I never used) that had ALL the spices in English and what they were in Spanish, unfortunately our son borrowed it and have never seen it again....typical!

Many thanks for the spice list, will print it out and put in my kitchen, also pass on copy to daughter and hubby who both always asking "what is so and so" in Spanish!

I just use whatever the cheapest eating apples are,and do not add any sugar, miss the good old bramley´s, have seen them for sale by British traders at markets, but soooo expansive.

An update for anyone living on the Costa del Sol, just been shopping and found a new amazing shop! It is in the new square just past the Myramar Centre, go past Dunnes and Liddles and it is next to the big optical shop. It is a Waitros/Iceland store, very big, and prices are good, so no more trips to Gib for flour etc., for us

Please Miss Marple can you track down a source for Pectin in Chiclana...the plum jam just wouldn't set last year, so we had to resort to collecting everyone's peach stones and adding them to the jam. Pectin nowhere to be seen.

Hi all,
Don't know if it is any more potent, but my old mum used to tie orange pips up in a muslin bag and place in the saucepan to help it set when making the marmalade

Hi Poollounger. Haven't seen pectin here but will look in the two Brit. grocers. Meanwhile, the Divine Nigella says put orange and/or lemon pips in water and boil them for 10 mins - watch they don't boil dry - strain and add to fruit. Adding lemon juice is also supposed to increase the pectin. Roll on the local fruit season. Strawberries are here from the Canaries but are a bit tasteless.

Seem to remember my Mum with a muslin bag when making jam many years ago!

Regarding the new Brit shop, they come under the name of Overseas Imports SL, and according to report in todays Euro Weekly started in Tenerife in 1998 It also said new stores are about to open in Benissa, Torrevieja, Estapona and Los Arqueros.
