OK, here I go again ... trying to get organised and I remember last year I booked at £630 return and people came back afterwards and said they got it for much cheaper.

So how do I get from Bilbao / Santander to thew UK cheaper than this?

Our ferry crossing one way Plymouth-Santander end August is nearly £400 so I think your quoted cost seems relative.
