I'm referring to the Portuguese legal side as you asked about taking residency in Portugal, hence my comments being based on Portuguese law.

Off the top of my head.

Minimum consequence - nobody realises (unlikely as SEF have access to the SIS records), but your UK driving licence will be invalid 90 days after registering residency....

I do have a UK Gov Gateway log in from which I access UK Gov sites whilst in PT.

Possibly, but until it's actually tested in a court of law we can only follow what is written.

Either way it's a moot point as from 01/01/21 our future absences are governed by what is written in...

The PT law says no consecutive absence of more than 6 months. So you would comply with the wording of the PT law by just spending one day in Portugal every 6 months as atlasthemonk suggested. ...

There is, it's 185 days, and the same rule applies in Spain and every other EU member state. But that 185 days only applies if the owner isn't a resident of Portugal.
