If you get a monthly payment, that can be used as income.

If you can't take anything out at the moment, it my be used as an asset IF you are allowed to liquidate within 1 year.

The "expedited service" you refer to is the old DCF process, which is gone forever. It's not suspended due to COVID. USCIS ended that service completely.

USCIS does not send notices or updates during processing time, unless it's an RFE asking for additional evidence. I believe you can set up an account online to go in and view your case status, but...

If your sponsor is self employed, he will know what that is (part of his US tax returns). You don't need to get that form yourself. Your sponsor will have it, and will include in the I-864 package.

Unfortunately some lawyers give this advice. But if things go badly, the lawyer is not at risk, but you are. If AOS from VWP goes wrong, it could mean a permanent ban from the USA.

Sure, that's a possibility. The processing time is about the same, but in the meantime, since he wouldn't be the spouse of a USC, he would have trouble visiting until that restriction is lifted.

If you get married, you can then start the process for a spouse immigrant visa (CR-1), which takes about a year from start to finish.

He may be able to visit on the VWP, but he wouldn't be able to...

Yes, although "apply" is the wrong word. You aren't applying for anything. You are just paying a fee.
