Thanks for the reply,

I can use the date of application for each one by just listing the month and year, the exact date would be difficult.
Where would the vignette number be for the first spouse...

You are correct, for non-salaried employment (where the hours can vary), it is the average of your last 6 months salary x 12.
That is what the Financial Requirement guide says.

Her payslip for the month of May is too low, the minimum on any one payslip must be £1550 or more.
£18,600 divided by 12 months is £1550. That is the minimum salary amount required.
