In the UK, maybe. The current rules are explained here - https://www.gov.uk/tax-sell-home/let-out-part-of-home, but they are expected to change on 6 April 2020 to reduce the final period exemption...

We almost certainly will go back to the UK at least once, maybe twice given how long it is taking to get citizenship nowadays (and with elderly parents who aren't in the best of health).

RRVs are valid for (1 or) 5 years from the date of issue.

The 2 years in Australia is simply time in the country (including both days of arrival and departure).
