Actually, I dont think this would be a problem... as far as I know there is not a required minimum employment time. There is a maximum visa period of 2yrs, and is easily renewable.

Mate, there are 10,500 E3 visas availlable just for Aussies... and only 65,000 H1B's for the rest of the world.

I dont think you have a problem, the E3 quota has never been reached.

Well, I didnt get very far... it would seem that the right way, if applying for a new visa, would be for everyone (dependants and all) to fly to Canada and apply for a new visa. All of the visa's...

Fortunately you are incorrect on this one, as the rules for an E3 are the same as a H1B in this regard, showing "Other qualifying creditials". i.e. Work Experience can be substituted for a degree.
