If your daughter was compelled to attend school, what would be your thinking/action? We're facing that in September. Given my paranoia (warranted or not) it concerns me.

Agreed. It's all about gains and risks. It will vary by location (the set up, the number of patrons, the incidence of Corona in the town) but I think it's good to have this cauttious/questioning...

I'm not sure if old Boris is as good as new. And even if he looked it (which he doesn't) the disease could impact him for years.

I think the lethality of Covid is around 2% for below 60 and 5%...

And of course 2/10 on a severe / possibly fatal or life long respiratory impairment disease are not exactly great odds. You'd be safer driving drunk without a seatbelt.

Yes take-out is a bandaid solution for a full blown cafe or restaurant. If that's the business model all they need is a truck.
