Because, like gravity, there are no viable alternative scientific theories to evolution, it explains most of the observed phenomena and isn't irreconcilably contradicted by any of them.

Maybe the federal government needs a specific Science Education Agency then we could use the "segregation of church and state" doctrine to keep the religious wingnuts out of the school laboratory? :D
