I would suggest Australia myself.

Things are a bit bleak back home in NZ. Winters are not well catered for either, so be aware.

Also, very strict quarantine process for pets to NZ,...

Just be aware that heat pumps have the issue of having to stop and defrost when temperature get really cold.

We live in Thames, which is mild compared to further south.

I am getting the picture that $40k will be ok for most parts of the Uk to live a non extravagant lifestyle for 2 adults and 3 children, if not in city centres.
