I don't have a problem paying tax in Spain for this financial year. But I won't have lived here for 183 days so I think the UK are going to expect me to pay...

Id still suggest driving down using the ferry Portsmouth/Santander and then keep the car for a couple of weeks while you settle. Maybe the dealer you buy the Spanish car from will take the Uk reg one...

All things being equal I'd agree 100%, but this trip includes a cat and a wife who's afraid of flying :)

This is a good thought. The car we have in the UK isn't worth a huge amount.
It might be best to take it and scrap it at the other end. (And hope it gets us there!)
