You need to have been doing a job earning above that amount for at least six months and have the bank statements and pay slips to prove it. If you have that in Cayman then you can apply with that and...

You can return to the UK any time you like. Most couples living overseas end up spending months apart because the Brit can only get a job after returning to the UK.

i don't understand why you're reapplying instead of seeking admin review when you have said before that you submitted the required number of statements but they were overlooked.

You don't need to send the sponsorship undertaking form. Just be sure you don't need a TB test in the country you're applying from.

Unfortunately you are not permitted to apply for a settlement visa while in the UK on a visitor visa. You'll have to apply from NZ. In most cases like yours the sponsor returns to the UK to find work...
