I just read online that it is actually illegal for a foreigner too work as anything that a Thai person can do themselves? Is this true? In that case, I may need to rethink as im pretty sure Thai...

In fairness, you need to start somewhere! I can speak Thai, not fluently, but I would rate myself 5/10, but I'd obviously learn more before I move out..
