Usually you can only "use" the embassy where you reside -- so if you are just tourists in Australia, you probably cannot apply through there.

It doesn't hurt to email the US embassy in Australia...

That is only one of the exceptions. There are others. People who entered on transit visas are also not allowed to adjust status. As are J-1 visa holders subject to the 2 yr HRR unless they serve...

Even though there are only two choices, IMHO it's inaccurate to characterize it as a 50/50 chance. Far more people are let in with AP than not let in. It's probably closer to a 99%/1% ratio... not...

Affidavits are not required, but you may include them if you wish. Have them notarized if you use them.

Other types of evidence are essentially the same things you brought to your AOS interview...

I quoted you what the US consulate website (UK one) said in post #3. They said VWP is the appropriate "visa" to use for your purposes.

Definitely illegal to ask about how old you are at a job interview, that one's been pounded into me by HR. Pretty sure it's illegal to ask about marital status and children as well.
