Thanks for the replies but the Essential Skills visa is a temporary one and I feel that the advice you are giving is based on experiences with permanent visas.

Exactly... and this is my line of reasoning.

If it IS legal for me to sell tickets in Australia, online from UK (or anywhere else in the world) ... why would it become illegal if the tickets were...

I know; that's why I wouldn't do it. I guess I'm just trying to make the point that it would be daft if it was lawful for me to do that, but unlawful for me to do the exact same thing while situated...
