Hi, My sister recently married a US citizen on a F1 Visa and they are applying for adjustment of status but on the affidavit of support it says that you need to show all 3 years worth of income...

You can apply for the EAD which will allow to work for a fully year! you can do that when you submit all your AOS paperwork.
