We are almost in the same situation and are hoping the bank recognises our rental income, so fingers crossed.

We also have other sources of income. For example we still have a house in England, so do banks recognize money from rented house as income?

Did you opt for a closed or open mortgage, open being that you can pay it whenever you want without any penalties.
