ESTA vs. K-1

Am I correct in assuming that the K-1 "trumps" the ESTA when entering the US? We will be entering the US with the K-1, but don't want to assume that we dont need the ESTA as well?

I found on the embassy website that it will be at least 7-10 days before he gets his documents back. It also states that they will be in a large brown envelope that is not to be opened by anyone...
