Nothing exciting - more than 50% of Mozzarella comes from cows milk. Hence places like to state it is 'Buffalo Mozzarella'. You honestly think the crappy cheese on your pizza comes from a buffalo?

I don't think cream cheese actually qualifies as a cheese (So I had to vote for Gouda) but boy is it good on a bagel with salmon.
