What a wonderful country it is actually, this is absolutely ridiculous..
Of course it is his responsibility that everything happens in line with the HACCP rules of the municipality, but he shouldn't be personally liable, his company should be. And that is where the fine should go to. What kind of disciplinary action his company will take against him is a different story though.
And of course this is setting an example to show everybody how serious they are taking food safety, but this is absolutely the wrong example. Going to court over a pack of milk which is one day past its expiration date is just plain ol' silly.
Shame on Emirates Palace btw, would have thought more of an European managed company (Although it is owned by the Abu Dhabi government)
