It was in a kids cook book and the crisps just give it a bit more flavour and are fun - you can shallow fry them but we do them in the oven because it's healthier (have two ballerinas and a kids with some health problems that means we need to eat fairly healthy meals).

So: chicken, either as breast or nugget size chunks, in egg, in flour, in crushed up crisps, in the oven.

Sounds easy. I'm all over it.

Yeah, I buy the tender loins (the little bit off the chicken breast) - don't have to cut them or anything, they make a nice little strip. You'll have to get yourself one of the kids healthy eating cook books - some good ideas for people that want easy, delicious things to eat.

I've got some chicken at home, was going to do something adult with it like stuffing it with boursin or cheese and wrapping in bacon and shit like that.

Now though, thanks to you....I'm making nuggets!

The mrs says I'm a big kid sometimes, this isn't going to help but maybe I'll update you once I've made them.

Easy peasy.The order is flour, egg and then crisps/breadcrumbs. The cooking term is pané. If you didn't want to use crisps - and I'm going to go out on a limb and suggest you don't make your own breadcrumbs - get a bag of panko breadcrumbs. You can season the breadcrumbs with pepper, herbs etc.

You can use the same technique for lost of foods. I made some courgettes 'chips' this way last week. Bake on a lightly oiled tray for 15 mins and then stuff your face whilst feeling virtuous as it's veg.

I've definitely tried it before with a meat (can't remember what) with the dip and flour and breadcrumbs (bought, not made)....I fried and they were alright just not great. Don't think I had enough oil or something...but the bread crumbs didn't stick to the meat well enough.

Will have another go.

It works better if you get a chicken carcass, put it in a blender, sieve the mush and use a cookie cutter for your base meat. The kids love it.

Indeed. Left if for about 80mins simmering. Was thick(ish), juicy and not too spicy but enough to give it some kick. Lubbly jubbly.
