chitlins are pigs intestines.
In France they make a sausage from it called an andouilette. its considered a great delicacy. I ordered it by mistake when i lived down there and was very close to vomiting on my plate.
will never try tripe and haven't even tried black pudding despite my northern heritage!

Oh God....i saw that wierd bloke on that country cottage cooking programme making black pudding once.It was the worst thing id ever seen.
