Seeing as its Pancake day (Shrove Tuesday)......
As a kid, every year I would always try and beat my record by one… I once did 21 pancakes in one night…. I think it took me over a week for my life to be normal again…. I knew what Paul Newman went through in Cool Hand Luke…....

13 when I was about 10, all covered in sugar and strawberry jam - YUM.

Ooh, I love pancakes! Thanks for reminding us, Bangleman! Does anybody have a recipe for pancake mixture? I used to buy it ready made, but I don't think you can get that here...

Its just plain flour, eggs and milk. Really easy!

It's a basic batter mix which you can use for Yorkshire puddings and toad in the hole as well.
100g/4oz flour
1/2 pint milk
1 or 2 eggs
pinch of salt

this is the basic recipe, but there are variations. My American friends put in cream and baking powder for example. Some continental Europeans also add a little in sugar.....

Scottish pancakes:
Makes 12 pancakes
Scots pancakes are cooked on a hot girdle (or griddle say they say in England).
Ingredients:
8 oz plain white flour
2 teaspoons bicarbonate of soda
Large pinch of salt
1 tablespoon castor sugar
2 tablespoons oil
1 egg
Milk to mix
Directions
Heat the girdle and grease lightly.
Sift all the flour and bicarbonate of soda into a bowl. Add in the castor sugar, oil, egg and a little milk. Stir into the flour and add enough milk to make a thick creamy mixture, approximately the consistency of very thick double cream.
Drop spoonfuls of the mixture onto the hot girdle and cook until they bubble on top. Turn and cook on the other side until golden brown. While cooking the rest of the mixture store the cooked pancakes between a small folded towel. Serve the warm pancakes with butter and jams or clotted cream.

In my defence, I am a great cook, but anything involving 'old fashioned' kind of food, like stuff with eggs and nursery puddings and the like, and I haven't a clue. I'm not really wife material, I guess...
