I've been to many a fine dining Indian restaurant and I love desi food (it being my favourite - I've had it all over the world at all price points from Michelin stars in London to Cocos in Lahore).
But... Indian food does not lend itself to fine dining in my opinion. It's that simple.
A curry is a curry, and trying to pretend otherwise just doesn't cut it for me. It's a food best consumed with Cobra beer.

The cuzza in Bombay Brasserie (for example) is absolutely delicious. But so can the cuzza at the BYOB place in Fareham we used to frequent after work on a Friday night.
