Bali Water Palace Tirtagangga - Wonderful Bali is the water palace i mean.
Also, take a quick 2 day one night trip to Yogyakarta and see Prambanan and Borobudur, both sites you can see in a day, one morning one afternoon then fly back the following day.
Don't get ripped off by the touts. Just say "No".
And no point in doing white water rafting in June-September, it's shoite.

That would be a great side trip, depending on if you were after a bit of culture. Yogya has a half decent backpacker bar scene as well for your one night. There are Javanese dance and gamalan music performances at Prambanan at night, plus shadow plays at the palace in town etc, although on just a fleeting visit I'd probably go to Bar Lucifer and drink Bintang and provide my own dancing.

We go to Bali for a week each year for complete rest and relaxation. Don't go anywhere near Kuta.
Why not split the 10 days between Seminyak and Ubud? We did this a few years ago. Altho I enjoyed our time in Seminyak we came to the conclusion it was basically an upmarket Kuta
That said there are some lovely hotels, good shopping and good restaurants.
Potato Head, Sea Circus, La Lucciola. There's always new places opening.
However, we adore Ubud. Can eat like a King there. In fact one of the top 50 restaurants in Asia is there - Locavore. Each year we run out of nights to try all the restaurants we want.
Must say very little nightlife in Ubud if that is your thing.
We might do an early morning trek (Campuhan Ridge) or a cycling tour and then spend the rest of the day perhaps doing a cookery class (Paon Bali was a blast), sightseeing, having spa treatments or chillaxing around the pool.
Highly recommend the Komaneka chain if looking at hotels. Last month we spent a wonderful week here:

Unfortunately and undeservedly Bali gets a bad wrap as most people only associate Bali with Kuta.
We go to Bali for a week each year for complete rest and relaxation. Don't go anywhere near Kuta.
Why not split the 10 days between Seminyak and Ubud? We did this a few years ago. Altho I enjoyed our time in Seminyak we came to the conclusion it was basically an upmarket Kuta
That said there are some lovely hotels, good shopping and good restaurants.

However, we adore Ubud. Can eat like a King there. In fact one of the top 50 restaurants in Asia is there - Locavore. Each year we run out of nights to try all the restaurants we want.

To echo the above I would split it 5 and 5, Seminyak and Ubud, do the beach, party, beach club thing in Seminyak then head off to Ubud to relax, massage, do some hiking and kick back.

Loved it. Preferred this trip to Koh Samui or Langkawi or the Gili Islands (though all of these holidays were also good).
If you had the time Seminyak, Ubud and Gili Islands / Lombok would be a great 2-3 week holiday.
Seminyak - great food at Sarong and Mamasan (both possiblely world class I'd say) and Sardine. Potato Head is good fun. There is also more upmarket places like Ku De Ta and others. From Seminyak easy to get to Jimbaran by taxi etc.
Avoid Kuta entirely.
Ubud - maybe getting a touch developed, but we loved it. Again good food there. Try Naughty Nuri's street shack for the ribs and cocktails (it really is a shack on the street), Dirty Duck and Ibu Oka Ubud for the suckling pig...
Good location to go on day trips to the mountains etc.
It was also great climate in the summer.
Little villas with own pools are quite affordable.

Went 2 years ago for 2 weeks - as some have suggested - we did half Seminyak and half Ubud.
Loved it. Preferred this trip to Koh Samui or Langkawi or the Gili Islands (though all of these holidays were also good).
If you had the time Seminyak, Ubud and Gili Islands / Lombok would be a great 2-3 week holiday.

Went about 8 years ago before it truly blew up and the locals twigged on. Then it was excellent. Hired a car and drove up the east coast. So Kuta, Semiyak, Uluwatu, Padang Bai... then got the ferry over Lombok and drove across there before getting a fast boat to Gilli T.
Since then I have been back for a wedding. Stayed in the Anantara in Uluwatu - amazing hotel but a bit rough round the edges and not cheap.
If I'm honest I wouldn't hurry back again. There's too much in SEA to see and do.
