Geez..I never knew about this series-- have to catch up!

I can relate to the Bonaparte's one...I had a similar situation. The kitchen had served up off oysters and one of our guests was immediately sick, because of the sour taste. I went to the kitchen to explain what had happened (oysters were off) and the chef denied it and said the oysters were fresh. So, I stormed off with the chef in tow to the cold room, got out the culprit tray of oysters and sniffed them...they were definitely off. They were 3 days old ! So, from then on, all oysters were discarded at the end of the second day - whether they smelled OK or not - never had a problem again.

By the way, when you do get natural oysters in a restaurant...they are the freshest - usually delivered the same day or 1 day old maximum. When you get oysters Kilpatrick or other heated oysters, they are usually about 1 or 2 days old !
