Did anyone see the program where Blumenthal made a Victorian style feast... and for dessert served what looked like bangers and mash with peas and gravy? The mash was actually ice cream, can't rememebr what the bangers were. The gravy was like a syrup and the peas were made by putting droplets of green liquid into liquid nitrogen causing them to solidfy.

Absolutely fascinating to watch.

When handling liquid gases at uni, we wore special protection eye goggles, face mask and heavy gloves. Chefs are not scientists and I doubt they wear appropriate safety gear or know about the many hazards associated with the handling and uses of liquid gases.

You should see the inside of Heston's kitchen 'The Fat Duck' (or whatever it is called). It looks like a science lab... quite literally! Little bubbling devices everywhere, (no not pots and pans, haha) special weighing equipment and temperature gauges.

I might be wrong - but I think Heston has been awarded a few scientific prizes...? (Bristol University rings a bell, but maybe he studied there.)
