Beetroot is great if cooked properly. It's best roasted and then tastes nothing like that odd slimy, vinegary stuff in jars which is all most people have ever tried.

I make a beetroot & orange chutney which is very popular.

My Mother-in-law makes a lovely beetroot chutney. It goes splendidly with a good sausage.

Branstons now do a beetroot pickle - have to say it wasn't very nice when I tried it.
