In Vicenza walk down the Corso toward the main piazza, veer right, and
there is a whole street of restaurants...
I was in several them with a cousin who lives in the area, and in one
the main floor was full of tourists, but he took us downstairs where
the locals all ate...

In Ferrara try Al Brindisi at Via Adelardi 23 (about as central as you can
get, near the cathedral and castle). The food is not the best I've
had in Italy (though it's still pretty good) but it's a place worth
visiting: claims to have been an eatery since the C15 and to have had
Titian and Benvenuto Cellini among the diners! Serious about wine, too.
If you have a chance, you really should visit Bologna for very good
eating.
