Going to Crete. Is it best to take sterling or Euro travellers cheques - and
why?

Take you ATM debit card and withdraw euro. Why? because it is the currency
of Greece and because debit cards are the best easiest and least bulky way
to get money.

Hadn't thought of that! How widespread are ATMs in Crete? Are there any
transaction or conversion charges?

Traveller cheques are generally not recommendable these days, except as a
backup in case you lose your bank card. As a UK resident I'd probably
choose pounds, because in case you don't use them the refund is not as
lossy.

With most banks yes, however Nationwide Flex Account does not charge any
fees itself though the machine provider may do so.

Just like ATM cards, you can buy and exchange travelers cheque for
free.

You have to take the difference in exchange rate into account.

Rates should be very close to each others whether one takes this into
account or not.
