Hmmm. Wonder why? To save on ink?

Well, my old passport has mainly LHR stamps, so I can live without
another.... But no, I have a US passport. The last time I flew via AMS
to the UK I arrived in Manchester, and I'm pretty sure I went thru
immigration in Manchester, but the memory is a little hazy.

Bummer! Really wanted an Ireland stamp!

Right, of course. My SO will be flying from GVA (holds a Swiss
passport) and meeting me at LHR, so must remember he has to go thru
the same process....

Not at all.
See:

Swiss passport and ID card holders go through the EU/EEA/Swiss channel
and their passports are never stamped. Not since 1 June 2002.

EU/EEA member states are not required to provide unrestricted
admittance until 2004, but the UK couldn't be bothered to set up a
special regime.
