If I travel from the USA, say JFK-AMS-VIE, will they stamp
my passport in the Netherlands and not in Austria due to the EU
and Schengen? If I really want a passport stamp from Austria in
my passport, will they stamp my passport if I politely ask for it?

There won't be anyone to ask if you arrive on an intra-Schengen flight. It'd
be like arriving at Denver on a flight from Chicago and trying to get a
stamp - you can't even get into the immigration area.
I suspect it would be a violation of Schengen regulations to give you a
stamp at other than your point of entry. (I've never been able to persuade
the Canadian border patrol people to give me a stamp in my US passport, for
instance, because of regulations)
If you really want one, you could fly through London or eastern Europe.

My old passport has an Austrian Stamp from 1989, and even then it was
almost impossible to get it. You just kind of drove into Austria from
Germany, no real stop.

Even then I don't think they stamp passports from EU member states (even
those outside Shengen).
This only from personal experience of course.
As for stamps for other countries, when I travelled to the USA (from the UK)
the first time they didn't stamp my passport, the second time they did.

Casey,
Actually they won't stamp your passport in The Netherlands unless you
ask. I've been to Austria a half dozen times or more (fly, drive, rail)
and have no passport stamps.

I guess you just have to try. I have tried the same thing on some
occations, sometimes they say yes - sometimes they don't

The problem is you have to find someone.
Immigration booths are likely to be found unstaffed if you're arriving from
one Schengen country to another. Of course there's immigration in the
non-Schengen section but that area may usually be reached only with a proper
air ticket and boarding card.

When I went JFK -> AMS last June they stamped my passport without my having
to ask. It might be different for EU residents, which I am not.

What are the regulations wrt Canada/US passport stamping? I never
tried to persuade them to stamp my passport (tho both times the UK
passport holder I was with did have it stamped).
A different question, so what happens when I fly BKK-AMS-LHR?
Immigration at LHR I presume? Then a separate trip, a few hours later
LHR-DUB and back....I'm guessing no stamp in DUB? I wouldn't mind some
diversity in my passport.
At the moment, because I had it recently
renewed, it's half filled with Thai and Myannmar stamps (and US) but
nothing else.
Hmmm, what happens on flights from Switzerland to LHR? The usual
immigration procedures I presume?

No stamping for holders of US or Canadian passports, I believe. Probably
stamps for everyone else (pure conjecture)

Yes, immigration at LHR. However as your flying from an EU country, maybe no
stamp, however it depends if you have an EU passport or not.

There is no passport control at all between Ireland and the UK.

Yes. Switzerland isn't even in the EU, nevermind Shengen!

A stamp is an obligatory when entering the Schengen area. However it's not
always done as some immigration officers are lazy. Anyway if you prefer a
stamp you can always ask for. As for intra Schengen travel you'll hardly
see an immigration officer.

When we left Bejing they were just waving passengers through, it took some
persuading for them to give us our chop.
We left Tangier during a security flap, my wife asked for her passport to be
stamped but changed her mind when a guard pointed his machine gun at her.
